Choosing a Charcoal Grill
Nothing else gives kebabs, tikkas and seekh the smoky flavour of charcoal. A fixed stainless steel charcoal grill, or mangal, is built into a restaurant kitchen or live counter for daily use, with a firebox that holds coals at the right distance below the skewers.
Before you order, decide
- Length: how many skewers you need to grill at once during service.
- Skewer height: the distance between coals and meat controls how fast food cooks.
- Ash drawer: a pull-out drawer makes cleaning safer while the grill is in use.
- Ventilation: charcoal gives off smoke and heat, so a proper exhaust hood is essential indoors.
