Choosing a Rumali Roti Maker
Rumali roti is cooked on the outside of an inverted, dome-shaped tawa, stretched thin and folded like a handkerchief. A dedicated rumali roti maker keeps that dome evenly hot so the roti cooks in seconds without burning, which a flat tawa cannot do. It is a standard fixture in Mughlai restaurants, dhabas and banquet live counters.
Before you order, decide
- Gas or electric: gas heats quickly and suits kitchens with an LPG or PNG line; electric is easier for live counters where gas is not practical.
- Dome size: a larger dome lets a skilled cook work faster at peak hours.
- Placement: at a live counter, keep a heat-resistant surface around it and some distance from guests.
Season the dome before first use as instructed, and clean it while still warm for easier upkeep.
