Choosing a Chinese Gas Burner Range
Indo-Chinese cooking needs very high heat for fast tossing in a wok, which is much more than a normal gas range gives. A Chinese burner range uses high-pressure burners that produce a strong, focused flame, with the wok sitting in a ring that holds it steady.
Before you order, decide
- Number of burners: count the woks in use at the same time during rush hour.
- Gas supply: high-pressure burners need the right regulator and pipeline; check this with your gas supplier or pipeline contractor.
- Water line: many ranges include a tap to rinse the wok between orders, with a drain channel.
- Exhaust: the flame and smoke need a strong hood above the range.
We build Chinese ranges to your burner count and space, and can combine them with a regular burner section on the same line.
