Choosing a Pasta Boiler
A pasta boiler keeps a large tank of water at a rolling boil, with individual baskets so several portions cook at once and lift out together. It is used in Italian restaurants, cafés, hotel kitchens and cloud kitchens, and works just as well for blanching vegetables or cooking noodles.
Before you order, decide
- Number of baskets: match it to how many pasta orders go out at the same time during the rush.
- Gas or electric: gas returns to the boil faster under heavy use; electric is simpler where gas is not available.
- Drain and refill: a drain valve makes changing starchy water quick, and a water inlet nearby saves carrying buckets.
- Placement: most kitchens put it beside the sauce station so cooked pasta goes straight into the pan.
Change the water regularly during service, starchy water foams and slows cooking.
