Choosing a Soiled Dish Landing Table
The soiled dish landing table is where used plates come back into the kitchen. Staff scrape leftovers into a chute and stack dishes before washing, so dirty items stay in one area, away from food preparation.
Before you order, decide
- Length: enough space for the dishes that arrive at the busiest time.
- Scrap chute: an opening with a bin below for food waste.
- Link to the wash area: it should lead straight to the sink or dishwasher, at the same height.
- Edges and drainage: raised edges and a slope to drain liquids.
- Rack slides: if you use a dishwasher, add rails for dish racks.
Pair it with a pot-wash sink, grease trap and plate racks for a complete dishwash area.
