Choosing an Idli Boiler
An idli boiler, or idli steamer, steams many plates of idli at once in a closed chamber, giving soft, evenly cooked idlis in bulk. South Indian restaurants, canteens, hostels and caterers use them for breakfast service.
Before you order, decide
- Idlis per batch: count your breakfast peak; the number of plates and chamber size follow from that.
- Gas or steam: gas-fired units stand alone; steam-connected units suit kitchens with a boiler.
- Plates: stainless steel idli plates that lift out and wash easily.
- Water level: a visible water level or automatic refill avoids running dry.
The same steamer can often do dhokla, momos and vegetables too; ask if you need different trays.
